I am posting this bison recipe in honor of my friend’s wife, who drew a buffalo tag and actually bagged one last weekend! Even the smaller bison leave you with a whole bunch of meat, and sometimes it is nice to get some new recipe ideas–especially when you’re cooking for a family.
I found this quick and easy wrap recipe that could work for lunch and dinner…and even breakfast. If you don’t have bison meat, you can substitute elk, venison or even moo-cow meat. This is perfect for busy people on-the-go. Let us know what you think!
In a medium bowl: combine lettuce, cheese, green onion, and salad dressing. Arrange mixture over tortilla. Top with Bison, tomatoes and pepper to taste. Fold in bottom and top portions of tortilla. Roll up side to enclose filling. Makes one wrap.
