CAMP SWEETNESS!!!

Great food makes a great camp. Simple and well-presented and tasty additions can really make for a unique and special camp food memory.

Try making a healthy Cream Cheese icing to top off camp made meals and desserts. You can use this icing for pancakes and waffles or on buns, muffins, or cakes. In a pinch, you can make simple cookies by smearing this icing between a couple of cookies or graham crackers. 

CREAM CHEESE CAMP ICING

8 oz. block of cream cheese

¼ cup of maple syrup or/ and honey

Vanilla extract

2 % vanilla yogurt. ¼ cup will do.

Blend these ingredients together. If the cream cheese is too hard, soften it over the fire, wood stove, or out in the sun. The more you stir it, the creamier it will become. This recipe makes about 2 cups of frosting. You can add a splash of creamer or milk if you prefer a thinner icing. I have also melted a few tablespoons of butter into the icing.

You can ice a Dutch Oven cake, or use as a breakfast topping for pancakes, waffles, or oatmeal. I have also used this on Cream o Wheat. You can always sprinkle some nutmeg or cinnamon on top as well. If you like it sweeter, add a spoonful of brown sugar.

A refrigerator roll of muffins, can be quickly coated with this simple icing. I have also made a camp pizza style dessert, in a Dutch Oven, decorated with this icing. Throw a busted-up Hershey Bar, and marshmallow pieces over top for S’more tasty fun.

If you take a zip bag and cut one corner, you can decorate your camp desserts and treats. I have also make a camp cake with a written icing message atop. The squeeze bag is a simple but fun way to make a different presentation.
