Fresh fish are great when complimented with a sweet side dish. There are plenty of choices. Different people prefer different tastes and flavors but here is a fry recipe that has never been turned down by hungry fish camp eaters.

Sweet Potato Fries are healthy and unique. You can cook them in many ways but since most eaters already enjoy French Fries, this recipe will be easily accepted. Sweet potatoes are less starchy and fatty than other potatoes. They also go very nicely with fish dinner. 

Depending on the size of your sweet tate, you may not need many. Montana Lin bought a sack of sweets from Costco the other day and just one will feed a football team. Some are HUGE! 

I cut off the pointy ends and skinned them. I then cut the Big Tate in half, using a clever or sharp knife. Once in half, I could work on shaping my fries. I like long string fries so I cut them into ¼ inch sized full lengths. Thicker cuts take longer to cook. The long strings will also shrink a bit. One half of my potato will feed both of us, so I cut the other half into cubes for another meal. Sweet Tate cubes are great with Breakfast. 

Now soak the fries in cold water. This will remove starch and keep the fries from sticking together. After a few hours of soaking, dry them with a towel. 

Now you have several cooking choices. The fries can be baked, deep fried, or for this recipe, air fried. Air frying is the healthiest and quickest method. At a camp, deep fry is more likely. 

Set the air fryer to 380 degrees. Sprinkle some olive oil over the fries and shake them up. For spices, add what you like. Old Bay already has most spices needed so try that. Others may just want onion powder, salt/pepper. Paprika, and garlic powder. 

Fry the lengths up in batches ensuring not to overfill the fryer. Air Fry them for 10-12 minutes. Thicker cuts take longer. I also shake the basket halfway through the fry. 

For a dipping sauce, have fun. Ketchup or Ranch dressing are easy. You can also create your own fun fry sauces. 

Some of my Fish Fry buddies like to make a filet sandwich topped with these Sweet Potato fries hanging out on the side. Whatever you prefer, you will always have room for a few more Sweet Potato Fries.
