Smoked Salmon Surprise

What you need for each serving.

Four ounces smoked salmon or trout – broken up into pieces

One teaspoon red bell peppers – minced

One teaspoon green bell peppers – minced

One teaspoon sliced green onion stems

Pinch of course ground black pepper

Three large eggs – beaten

One tablespoon butter

One English muffin – split and toasted

 

What you do.

In a nonstick fry pan on medium heat add the butter. Now slowly add the beaten eggs, peppers and smoked salmon stirring constantly until done. Now lay out the toasted English muffin halves on a plate and ladle the cooked eggs over the top of the muffins. Sprinkle the onion tops over the finished muffin and serve with thin slices of fresh cold melons.
