The Ingredients
- 1/2 lb Yukon gold potatoes (cubed)
- 1 green bell pepper & 1 yellow onion (diced)
- 1/4 lb maple sausage links
- 6 eggs + 1 cup shredded cheddar cheese
- Oil, salt, green onions, and hot sauce.
The 4-Step Execution
- Crisp the Potatoes: Sauté cubed potatoes in 1 tbsp of oil for 10–15 minutes until golden.
- Sauté the Veggies & Meat: Add another tbsp of oil, the peppers, onions, and salt. Sauté until soft, then add the sausage and brown.
- The Egg Vortex: Push the mixture to the outer edges of the skillet. Pour the beaten eggs and cheddar into the center, scrambling until set.
- The Fold: Toss the outer ring of veggies and sausage back into the eggs.
