The Fish That Cheats Dinner: 5 Ingredients, 15 Minutes, 0 Leftovers

Fifteen minutes is all that stands between you and dinner theater: Nagi from RecipeTin Eats has spent a decade perfecting a Honey Garlic Salmon that’s basically a personality test for your skillet, and it’s five ingredients deep — 4 tbsp honey, 2 tbsp soy sauce, 1 tbsp white vinegar (every vinegar’s invited except balsamic), and one very large minced garlic clove.

The sauce tastes flat off the spoon, and that’s the point. It only really wakes up when it hits the hot pan with the fish and caramelizes into something glorious.

So — pull two skinless salmon or trout fillets (200 g / 6 oz each) out of the fridge 20 minutes early, pat them dry, salt and pepper them like you mean it, then sear in olive oil over medium-high for 3–4 minutes skin-side down and 2–3 on the flip until both sides are golden.

Pour in the sauce, let it bubble and thicken for about a minute (a splash of water rescues it if it thickens faster than the fish cooks), and take the salmon off when the side of the fillet is still coral — not pale pink — which is 120°F/50°C for medium rare if you’re the thermometer-holding type.

Slide it onto plates, drizzle with every last bit of glaze, finish with sesame seeds and sliced chives or shallots, and serve something moppable alongside — bread, mash, steamed broccolini — because leaving that sauce in the pan would be a crime with no statute of limitations.
