When You Get the “Better Than Olive Garden” Response for Your Pheasant Alfredo

Consider this dish a well-run stage production: the pheasant takes its bow early. The bird is seared, then put in foil in the oven. Then add some noodles In the very same skillet, garlic, white wine, thyme, broth, and cream. Simmer all that into a sauce, and the pasta cooks directly in it, releasing its starch so the sauce thickens itself. No draining, no juggling, no second pan, ust half an hour between you and an alfredo that tastes like it took all evening! Just make sure you keep every strand fully submerged, or the whole noodlearchy collapses. It really is better than Olive Garden…and Olive Garden is great!

Creamy Pheasant Alfredo

One pot · 30 minutes · works with any game bird

Ingredients
Pheasant breasts 4 (or any game bird)
Montreal Chicken Seasoning to taste
Butter + olive oil 1 tbsp + a splash (more as needed)
Garlic, minced 3 cloves
Dry white wine ¼ cup
Chicken broth 2 cups
Heavy cream 1 cup
Dry pasta — linguine, fettuccine, or penne 8 oz
Fresh thyme (optional) 1 sprig
Grated Parmesan 1 cup
Salt & cracked pepper to taste
Fresh parsley, chopped for garnish

1. Sear & bench the bird — Oven on “warm.” Pat pheasant dry, season generously with Montreal Chicken Seasoning. Brown in 1 tbsp butter + splash of oil over medium-high, then move to an ovenproof bowl, foil on top, park it in the oven.

2. Build the sauce & cook the pasta in it — Same skillet, heat down to medium (add more oil/butter if needed). Garlic for 30 seconds → wine + thyme, simmer 1 minute → broth + cream, bring to a simmer → add pasta and stir until completely submerged (the make-or-break step). Simmer 8–10 minutes to al dente, stirring often.

3. The finale — Fish out the thyme, stir in the Parmesan, season with salt and pepper. Slice the pheasant, fan it over the hot pasta, and sprinkle with parsley.

Original recipe from MeatEater — it also works with any game bird (in case you didn’t see that above).
